in the southern pampas of brazil the “guachos” roamed the land, caring for their herds. each night they built bonfires for warmth and cooking hate evening meal. from these fires rose traditions of the churrasco or barbeque. the guachos mastered the art of slowly cooking savory cuts of beef, chicken, pork, and lamb on large skewers turned over open flames. guests were always welcomed to enjoy the succulent feast and dine until well satisfied.
